To be honest, today I threw my hair up in a bun, worked out, showered everything but my hair, thought, “Eh,” and left it that way. A couple of errands and a trip to the vet did not seem to warrant fancy hair, but it did apparently warrant a fancy necklace. I just got this beauty from Francesca’s on Thursday, but unfortunately for you, I cannot find it on their website. Oh well, you win some; you lose some (see: my hair above).

Recent Spring Purchases

Major spring fever has caused me to do some major spring shopping. Oh well, my birthday is Friday, so that’s the excuse I keep using. Here are some lovelies I have purchased in the past few weeks. I realize this combination of items does not scream “spring!” (what with all the black and everything), but I’ve been focusing on curating more basics for my closet, and one thing I’ve been lacking is neutral basics. I mean, I just recently realized my only pair of black pumps I had were 7 years old, from Walmart, and falling apart. It’s been a few days! Unfortunately, I had another death in the family, so the end of last week was pretty crazy. Here is another outfit during one of our “fake spring days.” Saturday it was in the ’50s. Yesterday it was in the ’30s. Today it’s in the 40’s, and I’ve just decided to stay in bed.

WIW 01 I A Boyish Look

For my first “Wear It Wednesday,” I chose “A Boyish Look” from the WhoWhatWear 30 Day Challenge. I’m not sure this look is super boyish, but rather boy-inspired with loose plaid, an over-sized sweater, and boyfriend jeans.

I feel like all I talk about lately is the weather, but seriously, Mother Nature, what the *&@# is wrong with you? It’s been mid ’60s for the past two days, and now I’m watching snow fall outside my window?! Blogging a non-coat outfit during this snow doesn’t help much either. Go home, Mother Nature; you’re drunk.

Try It Tuesday 01 I Flourless Clean Pancakes

My first “Try It Tuesday” involves something for YOU to try! I’ve been meaning to blog about this recipe for awhile now, and today seems like the perfect day to do so. I give you my Flourless Clean Pancakes!

I got the inspiration for these pancakes from Blogilates, but I have revised and tweaked the recipe many times before finally settling on a dish I love. The original recipe calls for protein powder, but I decided I didn’t love that idea, so I finally perfected the perfect balance of ground oat “flour” and brown rice flour. Because of the oats, these aren’t 100% gluten free, but you could certainly sub GF oats, and they would be!

First, slice a banana in half. You will only need half for this recipe, so I suggest wrapping the unused half in plastic wrap to save for later, or just eat it! Mash your banana with a fork in a medium sized bowl. Obviously, the riper the banana, the easier it will be to mash.

Next, gather up the rest of your ingredients!

Next, you’ll need to measure your flours. Here’s the tricky part: I actually use a food scale to measure out the flours in grams. Since the original recipe called for a scoop of protein powder, and my protein powder scoop holds 30 grams, that’s how I came up with how much flour to use. I add just a little bit more egg whites than the original recipe calls for, so I use just a little bit more flour to balance out the viscosity of the batter. Therefore, I use 17 grams of oat flour and 17 grams of brown rice flour. Don’t have oat flour? Just blend rolled oats in a blender or food processor like I do. Don’t have a food scale? I’ve put each flour in a 1/4 measuring cup below for reference. Because each flour has a different weight and texture, the volumes are different. Also, you could certainly just use all oat flour or all brown rice flour; I just like to use both.

Once you mix your flours with the banana, the mixture is going to become super powdery. In fact, you won’t even be able to mix it all together. This is normal.

For the egg whites, I add just a hair under 1/2 a cup. I’m not sure why this amount; this just seems to give me the best consistency. I wanted to add more egg whites than the original recipe because I wanted more protein. Half a cup seemed like too much. Just like with the flours, once you add the egg whites, the batter is going to be very liquid-y. That’s when you add the cinnamon and the psyllium husk. If you’re not familiar with psyllium husk, you can find it at Trader Joes. It is a soluble fiber that helps aid in digestion and to provide a feeling of fullness. You could substitute ground flax seed or just more flour if you don’t have psyllium husk or just don’t want to use it.

Meanwhile, turn a large skillet on your stove to medium heat.

Now to sweeten the deal: add a splash of vanilla extract (about half a teaspoon) and 4 drops of vanilla liquid stevia. Liquid stevia can be found at most grocery stores; I got mine at Whole Foods. As a substitution, you could use half a packet of any sweetener of your choice or about a 1/2 teaspoon of real sugar.

Finally, you will add almond milk to thin out the batter to your desired consistency. I start with two tablespoons and then go from there until it looks about like this: drippy but still holds together.

Note: Make sure you are ready to use your batter somewhat immediately. I have found that the longer it sits, the more it thickens. If this happens, just add a bit more almond milk.

Grease your skillet with the oil of your choice. I use spray olive oil. Then, pour batter onto the skillet in small amounts, until your get the shape and/or number of pancakes your desire. I usually get about 4 medium sized pancakes. Let pancakes cook for about 2-3 minutes and then flip for about another minute or so. These don’t take very long, but the good thing is, if you happen to “overcook” them (aka start cooking and then forget about them), they’re fine. I’ve never burnt them! If you’d like a denser pancake, then cook longer.

I think it’s important to note that these are not going to turn out the like fluffy glorious pancakes of your childhood. They’re flourless after all. These are going to turn out slightly thicker and denser than perhaps what you are used to, but they are still delicious!

Once finished, top with whatever you desire! Usually I just spread some almond butter on them, but you could add chopped bananas, the traditional butter and syrup, or I’ve even spread butter and jam on them! The possibilities are endless.

So good! I seriously eat these almost every day for breakfast!

Here is the actual recipe, adapted from Blogilates’ “Low Carb, Low Fat, High Protein Pancake Recipe“:

Ingredients:

1/2 banana, mashed

17 g oat flour (just under 1/4 C)

17 g brown rice flour (about 1/8 C)

1/2 C (just under) egg whites

1 TBL psyllium husk

1 tsp cinnamon

1/2 tsp vanilla extract

4 drops vanilla liquid stevia

2 TBL almond milk (or more, depending on desired consistency)

In a medium bowl, mash banana. Add oat flour and brown rice powder; mix with banana until a crumbly paste forms. Pour in egg whites; mix. Add cinnamon, psyllium husk, vanilla extract, and stevia. Mix. Batter will be quite thick. Add almond milk until desired consistency is reached. Heat a large skillet to medium heat and grease skillet. Pour pancake batter onto skillet in roughly 1/3 C increments. Cook pancakes for 2-3 minutes and then flip. Cooked sides should be golden brown. Cook other side for an additional 1-2 minutes. Top with your favorite pancake topping!

Ch-ch-changes!

I decided that I enjoyed my Fridiary post and would like my blog to have a little more cohesion.  I’m a teacher, after all, so I’m used to creating things with an objective in mind. That being said, I’ve decided to give each weekday a “category” of sorts. These will be used somewhat loosely, but I think they’ll help me focus more, as well as give my blog more direction. I will certainly continue to focus on fashion, but like I said Friday, I’d like to make my blog a bit more personal and allow readers to get to know me a little bit more. Therefore, here is what you can expect:

Misc. Monday

Exactly what it sounds like – Mondays will be a mixed bag, considering I rarely plan anything ahead of time. Let’s be honest though: the easiest posts are outfit posts, so I suspect Mondays will have loooots of outfits.

Try It Tuesday

I’ve been in a rut lately, so I feel the need to try new things. Whether it be a recipe, a nail polish, a hair style, a book, whatever, I just need to branch out a bit more.

Wear It Wednesday

AJ inspired me with this one when I saw her tweet about this wardrobe challenge from WhoWhatWear. Similar to Tuesday, this will help me ramp up my wardrobe a bit, and force me to step outside my comfort zone. Each Wednesday will feature an outfit with one of these challenges. I’m thinking of possibly doing a link up with this?

I’m a server right now, so I’m not made of money. I have had to learn to be pretty thrifty in order to sustain the lifestyle I want. Accordingly, Thursdays will be devoted to all things thrifty: sale alerts, items I covet from a particular sale, wishlists, an outfit featuring a great bargain, etc.

Fridiary 01 I 2/28-3/6

In an effort to create some consistency and to make this blog a little more personal, enter Fridiary, a very unoriginal idea in which I will recap some of the more interesting aspects of my week. I don’t always have time to shoot and post outfit photos every day, and not everyone likes outfits. Win win? If nothing else, this feature will allow us all to soak up the voyeurism our society values so much. *wink wink*

Gatlinburg

One of friends turned 30 last week, so a big group of us decided to rent a cabin in Gatlinburg, TN to celebrate her “dirty thirty.” The weekend consisted of delicious food, hot tub shenanigans, board games, and a little flip cup action (if you want a reminder of how old you’ve gotten since college, break out a game of flip cup). The best part was the weather: Saturday was around 60 degrees, and I.didn’t.have.to.wear.a.jacket. Did you read that? NO JACKET. Heaven. We spent the gorgeous day walking around downtown Gatlinburg, soaking in the sights. We did a little whiskey and moonshine tasting, bought some obligatory toursity-town fudge, and saw a bear. P90x3 & DietBet

I’m still going strong with P90X3! I’ve entered Phase 3, so I only have like 28 more days left! I’ve definitely been noticing some differences and improvements, and I’ve decided that when I’m done, I’m going to do another round, but doubles instead (so, 2 workouts a day for a total of 60 minutes)! I’ve also considerably cleaned up my diet. I’ve been eating really well, and that in itself has helped me tremendously – I have way more energy now. I’m thinking about posting a few recipes on here? Oh, and I also joined a DietBet at the beginning of February! Admittedly, it’s one of those things that sounds kind of sketch when you first hear about it, but I love it! Basically, you sign up, pay whatever the bet is, and if you lose your predetermined percentage of body weight each month, you split the monthly pots with all the other “winners.” In my DietBet, each monthly pot is ~$15,000. Yes, please! It’s too late to sign up for the DietBet I’m doing, but they start a new one every month.

Oil Pulling

I randomly found this blog post on Facebook yesterday; it sounded just weird enough to pique my interest, so I decided to give it a try. I’ve read about all the wonderful things that coconut oil can do for you, so I see no reason why this should be any different! I’m not a huge fan of coconut in things, but for some reason, I don’t mind coconut oil! If you have a texture issue, then I would recommend melting the oil first, as my least favorite part is definitely waiting for the solid oil to melt in my mouth (it’s a little weird). Additionally, the thought of swishing for 20 minutes seemed like an eternity for me, but I have found that if I keep active, the time does seem to go faster. Yesterday I swished while doing the dishes, and today I’m swishing right now as I write this post!

Bridesmaid Dress

If you recall, one of my best friends is getting married in Vegas in September, and I’ve been asked to be a bridesmaid. In an earlier blog post, I couldn’t decide which dress to get. Here were my top 2 choices from my first fitting at Alfred Angelo:

I thought I looked better in the dress on the right, but the one of the left had a more “youthful feel” to it; I was so indecisive though that I decided to go for a second fitting to try the dresses on again, plus a few others that I hadn’t seen before. Here are a few more I kind of liked, too:

Ultimately, I decided that what I really loved was the bodice of 7278S, but I wasn’t crazy about the super flowy skirt. I’d rather simplfy the dress a bit and dress it up with bold jewelry and amazing heels. With the help of my stylist, I finally figured out that there was another dress that had the exact same bodice, but a simple skirt, and I was sold. I will be getting 7289S in the short version (the store only had the long version to try on, so you have to imagine it hitting me above the knee). Here’s my final choice! It will end up being all in the “grape” color.

And that’s pretty much been my week! Every other day has been spent cleaning the house, working, and watching Damages.  How’s your week been? Anything exciting happen?

So yeah, yeah, it’s still like 30 degrees right now, but two weekends ago it was a glorious 55, and I wasted no time throwing on flats and a light jacket. I was going to at least enjoy ONE nice day! I waited so long to post this outfit because I’ve just been staring longingly at it every day, vehemently wishing it was warm again. Kidding, but seriously, Mother Nature, I’d rather you just shorten Winter altogether rather than give us a random warm day here and there. Throw us a bone!

Additionally, please excuse the poor photo quality yet again. There’s something weird going on with my camera lens; I either need to get it professionally cleaned or replace it. Let’s just pretend I put a fancy filter on these photos and now they’re 1,000 times hipper. Blurry = hip, right?

Dat Jacket

I have an army green jacket, but for the past few months, I’ve been coveting a navy colored field jacket, particularly this one or this one. Even though I’ve been slowly but surely trying to focus on quality over quantity, I can still (admittedly) be a bit of a cheapskate at times. Luckily though, I heard tell of a dead ringer floating around Target, and I snatched one up!

I love this jacket, and can’t wait until it warms up to actually be able to wear it (this day was a random warm day…and now it’s back to 20 degrees). Additionally, last month I scored this purse from JustFab and these boots from Target. I’ve pretty much been living in these boots lately, as they are super comfortable and sort of just kick ass.

You also might notice that I changed up my hair a bit. I went into my salon and basically said, “Uh, I want ombre, but not ombre…something subtle” (I’m nothing if not  articulate). This is what I got! At first, I was terrified…
